1 湯匙醬油
1 湯匙調味米醋,亞蒸餾白醋
1 茶匙大蒜粉
1 茶匙薑粉
1 根青蔥,切碎
1 杯水
2-3 杯植物油,用於煎炸,因此請確保鍋中至少有 1-2 英寸的油


過程

1) 在大平底鍋中用中火加熱 2 茶匙麻油。
2) 將涼拌高麗菜、醬油、醋、大蒜粉、薑粉和青蔥放入熱鍋中,炒 5-8 分鐘,不時攪拌,直到高麗菜變軟。(不要把高麗菜煮過頭,因為油炸後會變成糊狀。)
3) 把春卷皮分批鋪好,將1/3 杯高麗菜餡放在中間。
4) 用水刷邊緣,然後像捲餅一樣捲起來,確保所有邊緣都密合。
5) 把春卷放置一旁(不要把它們疊起來,因為會黏在一起!)。
6) 在鑄鐵平底鍋或鑄鐵荷蘭鍋中用中火加熱植物油,直到油達到大約 350 度。(我使用像這個一樣附在煎鍋側面的煮糖溫度計。)
7) 小心地將 4-6 個春卷一次放入熱油中,調整油的熱度,使其保持在大約 350 度。
8) 煎 5-8 分鐘,把春卷翻過來,讓春捲變得酥脆。
9) 將酥脆的春卷放在金屬架上冷卻,使其保持酥脆。
